Catalog product items usage reporting
It is not possible in PandaDoc to create custom reports on catalog items, depending on what items appeared in the documents with what frequency, from which sales rep, etc. It would be really convenient for management to have this tool so that we can track the activities of our sales reps.
(PD Sales Rep - it is a dealbreaker for this customer, potentially 8-10 Business level licenses).

discounted price per unit
The option to show the discounted price per unit (not only the final one).
Example: The price per unit is 790€ and I give my customer a 30% discount. Since the customer ordered 3 parts, Pandadoc will calculate the discount for the final amount but not for the price per unit.

Be able to customise sections in a pricing table
At the moment you can only customise the design of the whole pricing table but what if I wanted my sections to look different to my pricing table headers, like in panda classic. To my knowledge this isn't possible.
