I'd actually go further than this, it should be available to pass back to any record in HubSpot, not just the deal = eg contact or company record as well.

Currently, if I send a contract where I ask for a bunch of data, the information even if its on variables does not get moved to hubspot automatically

Would like to have the Hubspot Automation to update a property whenever a document’s status is updated.
