Hi Valeryia,
As Ben has mentioned, use case is to be able to reliably personalise the email by referencing fields related to the recipient and sender. Extending Ben's post, we also need to have multiple versions of the saved messages, so they appear personalised by the sender (signature, contact info, etc), which then all require updating/modifying if there are changes. If all fields are exposed as merge fields on the saved message template, then we can maintain a single template, and the correct data is pushed into the email body consistently, avoiding potentially embarrassing errors
